Gaterama is the name of the wet mill that processes the coffee from around 628 farmers in to this cooperative lot.
Based in the District of Gitega grouping together has allowed them to provide health insurance to all the farmers as well as provide seedling distribution, Natural shade tree distribution and training on a range of agricultural best practices.
Farmers also use natural fertilizer from the cows kept across the 1256 acres that makes up the total area between members.
Cherries for this lot are picked and brought straight to the washing station. After a quick clean cherries undergo a 10 hour dry fermentation followed by a 12 hour wet fermentation before being washed and then soaked for another 10 hours. Parchment coffee is then dried on raised beds in a pyramid shape for a round 2-3 weeks. Final quality is controlled via a gravity table, colour sorter and final handpicking for any troublesome outliers.
